While visiting Rogers, Arkansas this past weekend, I was introduced to JELL-O cake.  It was very tasty and a great summer dessert.  Our hosts (Sarah, Becky, and Mary Jo) were trusting enough to let the kids help top the cake with Cool Whip and berries.  Again, there were plenty of Cool Whip covered utensils that went into their mouths.  Here is the JELL-O cake we enjoyed with the recipe at the bottom:

Bring on the cake.

A slice of JELL-O cake.  See that pink in there?  That's JELL-O.  Crazy, I know.  


1 Box of white cake mix
1 Small box of strawberry* JELL-O
1 Cup of warm water
1 Container of Cool Whip

Bake cake according to directions.  Allow cake to cool and poke holes in cake with wooden spoon handle or large fork.  Mix JELL-O with 1 cup of warm water.  Pour mixture over cake.  Refrigerate until chilled.  Once chilled, top with Cool Whip and decorate with berries.

*You can use any flavor JELL-O.  Sarah shared that she has made two cakes, one with strawberry and another with lime for Christmas.
